Cheesy Fan Potatoes

If you love potatoes and cheese, then this is the perfect recipe for your. Potatoes fill with rich cheese, butter and cream, perfect for lunch or snacks. Kids and adults will love it! Yields 8 portions.

INGREDIENTS
8 medium Yukon Gold potatoes, skin on, scrubbed
1/2 cup butter, room temperature
2 garlic cloves, chopped
1 1/2 cup grated aged cheddar cheese
1/4 cup grated Parmesan cheese
Salt and freshly ground pepper, to taste
About 1/2 cup whipping cream
2 tbsp. chopped chives, for garnish
Sour cream, for serving

PREPARATION
1. Preheat oven to 425 degrees F. Line 9-inch x 13-inch baking dish with parchment paper.

2. Combine butter, garlic, 1/2 cup cheddar, Parmesan cheese, and salt and pepper. Set aside.

3. Without cutting all the way through, make 1/4-inch slices into the potato.

4. Spoon butter mixture onto potatoes and transfer to baking dish. Cover and bake until potatoes are just tender, about 1 hour to 1 hour and 10 minutes. Uncover and drizzle about 2 heaping tsp. whipping cream over top of each potato and then sprinkle with remaining 1 cup cheddar. Bake until potatoes are fork tender and cheese melts, about 15 to 20 minutes more.

5. Garnish with chives and serve with sour cream.

Roasted asparagus risotto


Who says eating healthy is boring? Well I have a healthy-delicious recipe for you, family and friends. This risotto recipes uses arborio rice, asparagus and is perfect as a side dish for lunch or dinner.

Preparation time: 20 minutes
Total time: 45 minutes
Makes: 6 servings

INGREDIENTES
900-mL pkg chicken or vegetable broth
2 tbsp olive oil
1 medium white cooking onion, finely chopped
1 garlic clove, finely chopped
2 cups arborio rice (Can’t find arborio rice? Click here if you’re using white rice instead.)
2/3 cup dry white wine
1 bunch roasted asparagus cut into 1-in. pieces
1/2 cup grated Parmesan cheese
1 tbsp butter

DIRECTIONS
1. Simmer broth plus 1 1/2 cups water in a pot over medium-high heat. Remove from heat. Keep warm.

2. Heat oil in a large pot over medium-low heat. Add onions and cook until very soft but not browned, about 8 min. Add garlic and cook for 1 more min. Add rice and stir until it is well-coated with oil, about 1 min. Add wine and stir continuously until the wine has been absorbed by the rice. Add 2 cups warm broth and cook, stirring, until the liquid has been absorbed. Repeat, adding broth in 1/2-cup increments until rice is soft, with a slight firmness in the centre. The cooking time will be about 20 min.

3. Remove from heat and stir in roasted asparagus, Parmesan and butter. Season with salt and pepper. salt and pepper to taste.

Black Eyed Pea and Peach Salad


This delicious Black Eyed Pea and Peach Salad is the perfect example of how to mix fruits with your salad, it gives a sweet touch to the recipe. Is perfect as an appetizer, side dish, lunch or celebrations. You can replace the peaches for pears, apples or nectarines. Serves 6 dishes.

INGREDIENTS
6 large handfuls baby spinach (about 8 cups)
1 (14 ounce) can black-eyed peas
2 peaches, sliced
5 slices bacon, diced and cooked until crispy
1/2 red onion, sliced
Handful chopped toasted pecans, for garnishing

Dressing
1/3 cup olive oil
3 tbsp. white wine vinegar
1 tsp. Dijon mustard
1 clove garlic, minced
Pinch sugar
Salt and freshly ground black pepper, to taste

PREPARATION
1. Add spinach, black-eyed peas, peaches, bacon, red onion and pecans to a large large bowl.

2. For the dressing: combine olive oil, white wine vinegar, Dijon mustard, garlic, sugar and salt and pepper.

3. Toss salad with dressing. Taste and adjust for seasoning. Garnish with more pecans, if desired.

Broccoli Caesar Salad


Eating healthy is always good, but even better if it is a Caesar salad with grilled steak or chicken. This delicious Broccoli Caesar Salad is perfect for lunch, school lunch for kids, dinner, picnic or side dish. Serve salad warm or cold. Enjoy!

Ingredients
1 large head broccoli, cut into florets, blanched or steamed, drained well
3 tbsp. mayonnaise
Juice of 1 lemon
1/4 cup Parmesan cheese
3 tbsp. olive oil
1 tbsp. Dijon mustard
1 tsp. Worcestershire sauce
2 garlic cloves, minced
Salt and freshly ground pepper, to taste
2 slices pancetta or bacon, cooked and chopped
Parmesan cheese, for garnishing

Directions
1. Combine mayonnaise, lemon juice, Parmesan, olive oil, Dijon mustard, Worcestershire sauce, garlic, and salt and pepper. Add broccoli and toss to combine. Finish pancetta and freshly grated Parmesan or use a vegetable peeler to garnish with shards of Parmesan cheese.

Bacon-and-Escarole Grilled Cheese


Sandwiches are one of the best meals for lunch or dinner, best part? You can easy make a delicious sandwich from leftovers. For the Bacon-and-Escarole Grilled Cheese you only need six ingredients. Perfect for lunch, school, work or kids snacks.

Preparation time: 30 minutes
Servings: 4 people

Ingredients
12 slices bacon (12 ounces)
3 tablespoons Dijon mustard
1 tablespoon honey
8 slices sourdough bread
6 ounces sharp cheddar, sliced 
1/2 small head escarole, trimmed and torn into bite-size pieces

Directions
1. In a large skillet, cook bacon over medium-high until fat is rendered and bacon is crisp, about 7 minutes. Transfer to paper towels to drain. Pour off and reserve all but 1 tablespoon fat. In a small bowl, combine mustard and honey and spread on bread. Divide cheese and bacon among bread to make 4 sandwiches.

2. Place skillet over medium; in batches, add sandwiches and cook until bread is golden and crisp and cheese is melted, 6 to 8 minutes, flipping halfway through and adding more bacon fat as needed. Open sandwiches, add escarole, close, and serve immediately.

Ricotta and grilled tandoori chicken sandwich


This delicious sandwich is the perfect lunch everyone, specially kids. Is healthy, full of proteins and it taste wonderful! Quick and easy to make, in no time your lunch will look chef book recipe. Try it out! 

Makes: 4 servings
Preparation Time: 15 minutes

Ingredients
2 chicken breasts, halved lengthwise
1 tbsp  (15 mL) tandoori curry paste
2/3 cup (160 mL) Ricotta
1 tsp  (5 mL) honey
1/2 zest and juice lime
salt
freshly ground pepper
4 small multi-grain buns
4 lettuce leaves

Directions
1. Coat chicken with tandoori curry paste and set aside for at least 15 minutes.
2. Preheat grill to medium heat.
3. Mix Ricotta with honey and lime zest and juice. Season with salt and pepper.
4. Grill chicken 5–7 minutes per side or until chicken is thoroughly cooked.
5. Meanwhile, heat buns on the grill.
6. Spread buns generously with Ricotta mixture, and add tandoori chicken and lettuce to the bun.

Easy Snack Wraps


Easy Snack Wraps are the best lunch (and easy!) you could possible do. This delicious Snack Wraps are healthy and quick to make. The wraps are perfect for kids lunch or work snack.

Ingredients
4 whole-wheat tortillas (can buy the package of 4)
1 package light cream cheese
1 head lettuce
1 package sliced deli-style turkey
3 tablespoons of shredded carrots
3 tablespoons minced tomato

Directions
1. Spread the light cream cheese evenly over the tortillas. Add the lettuce leaves and Turkey slices. Sprinkle the carrots and tomatoes over the Turkey slices. Now Roll the tortilla into wraps and cut diagonally (into bite sized pieces). You an secure the wraps with toothpicks so it doesn't open. Pack in your lunch bag or kids bag and ready to go! Delicious, healthy and quick lunch.

American Macaroni Salad


There's nothing better than a delicious American Macaroni Salad, a light and healthy lunch or side dish. This crunchy recipe is full of fresh vegetables and nutrients, can be serve for Summer or any special event.

Ingredients
2 cups dry elbow macaroni, cooked, rinsed, and drained
1/3 cup diced celery
1/4 cup minced red onion, soaked in cold water for 5 minutes, drained
1 tablespoon minced flat-leaf parsley
1/2 cup diced vine-ripened tomato (optional)
1/2 cup prepared mayonnaise
3/4 teaspoon dry mustard
1 1/2 teaspoons sugar
1 1/2 tablespoons cider vinegar
3 tablespoons sour cream
1/2 teaspoon kosher salt, plus more to taste
Freshly ground black pepper

Directions
In a large bowl combine the macaroni, celery, onion, parsley and tomato, if using. In a small bowl, whisk together the mayonnaise, mustard, sugar, vinegar, sour cream and salt. Pour the dressing over the salad and stir to combine. Season with salt and pepper to taste. Serve. Store covered in the refrigerator, for up to 3 days.

Ingredients
- 6 ears sweet corn
- 1/2 cup milk
- 1/2 cup heavy cream
- 1/2 cup white cheddar cheese, shredded
- 1/2 teaspoon cayenne pepper
- 2 eggs, beaten
- Salt and freshly ground black pepper

Directions
1. Preheat oven to 350 degrees F. Grease casserole dish.

2. Shuck the corn and cut all kernels off with a knife into a bowl, making sure to keep all of the runoff juice from the corn. Reserve.

3. Mix together the milk, heavy cream, cheese, cayenne pepper and eggs. Add in the reserved corn, cheese, cayenne, salt, and pepper. Pour mixture over reserved corn.

4. Pour into casserole dish and bake for 35 minutes or until set.

BLT Pasta Salad Recipe

I love baking and using the oven, but this super easy and delicious recipe is a must-try.  The BLT Pasta Salad Recipe, the BLT is made up of five ingredients: bacon, lettuce, tomato, mayonnaise, and bread. This recipe can be serve as lunch or dinner.

Preparation time: 20 minutes
Cook time: 22 minutes
Total time: 42 minutes

Ingredients
- 12 ounces corkscrew-shaped pasta
- 1/2 cup milk
- 12 ounces lean bacon
- 3 medium ripe tomatoes, cut into chunks
- 1 tablespoon chopped fresh thyme
- 1 clove garlic, minced
- Kosher salt and freshly ground pepper
- 1/2 cup mayonnaise
- 1/4 cup sour cream
- 4 tablespoons chopped chives or scallion greens
- 5 heads Bibb lettuce, quartered, or 5 cups chopped romaine hearts

Directions
1. Cook the pasta in a large pot of salted boiling water as the label directs. Drain and toss with the milk in a large bowl; set aside.

2. Meanwhile, cook the bacon in a large skillet over medium-high heat until crisp. Drain on paper towels. Discard all but 3 tablespoons drippings from the pan. Add the tomatoes, thyme and garlic to the pan and toss until warmed through; season with salt and pepper. Crumble the bacon into bite-size pieces; set aside 1/4 cup for garnish. Toss the remaining bacon and the tomato mixture with the pasta.

3. Mix the mayonnaise, sour cream and 3 tablespoons chives with the pasta until evenly combined. Season with salt and pepper. Add the lettuce; toss again to coat. Garnish with the reserved bacon and the remaining 1 tablespoon chives. Serve at room temperature.

- 1 store-bought baked thin-crust pizza shell, preferably whole-wheat, such as Boboli
- 4 cups (about 4 ounces) baby spinach leaves, thinly sliced
- 2 teaspoons olive oil
- 3 ounces prosciutto di Parma, thinly sliced
- 1/2 cup grated Parmesan (1 1/2 ounces)
- 3 cloves thinly sliced garlic
- 4 eggs

How to Cook it:
1. Preheat oven to 450 degrees F. Place the pizza shell on a cookie sheet. Scatter spinach all over crust. Drizzle with oil. Evenly distribute prosciutto, Parmesan and garlic on top of spinach. Crack eggs onto pizza, roughly positioning 1 yolk on each pizza quarter. 

2.Bake for 12-15 minutes, until spinach is wilted and egg whites are just fully cooked. Cut into 4 large slices. Serve and enjoy!

The Ultimate Lady's Cheesy Mac and Cheese


Mac and Cheese have never been so delicious! Prepare this for lunch or dinner and enjoy a mouth-blast mac n cheese with cheddar, swiss and jack cheese. It's the ultimate!

Ingredients
- 2 cups dried elbow macaroni (4 cups cooked)
- 1/3 cup grated Cheddar
- 1/3 cup grated Swiss
- 1/3 cup grated Jack
- 1/3 cup grated colby
- 1/3 cup grated Muenster
- 1/3 cup grated Gouda
- 4 tablespoons butter, cut into pieces
- 3 eggs
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 1 cup milk
- Nonstick spray

Directions
1. Preheat oven to 350 degrees F.

2. In a large pot, bring water to boil. Season water with salt and cook macaroni until al dente, about 10 minutes. Drain pasta and place in a large bowl and while pasta is still hot add all the cheese. In a separate medium bowl, using a whisk, combine the sour cream, butter, eggs, salt, pepper, and milk and add to the macaroni mixture. Spray casserole dish with nonstick and pour macaroni mixture into the dish. Bake for 30 to 45 minutes or until golden brown. Top with additional cheese, if desired.

Spinach and Cheese Cannelloni with Roasted Tomato Sauce

Dinner is perfect for everyone! is healthy and delicious. You'll fall in love with Spinach and Cheese Cannelloni with Roasted Tomato Sauce with only 250 calories per cannelloni.

Ingredients:
Sauce
2 pounds (908g) small vine-ripened tomatoes
1 small fennel bulb, coarsely chopped
1 medium yellow onion, coarsely chopped
1 red bell pepper, coarsely chopped
4 cloves garlic, halved
2 tablespoons extra-virgin olive oil
2 tablespoons balsamic vinegar
Salt and freshly ground black pepper
1 can crushed tomatoes (19oz/540 ml)
2 cups vegetable broth
1 1/2 teaspoons dried Italian seasoning
1/8 teaspoon crushed red pepper flakes
8 whole basil leaves (medium sized), chopped

Filling
2 cups part-skim (5%) ricotta cheese
1 cup 2% cottage cheese (mash with fork)
1/2 cup packed freshly grated Parmesan cheese
1/2 package frozen spinach, thawed, squeezed dry and finely chopped
1 egg
1/4 teaspoon dried oregano
1/4 teaspoon dried basil
1/8 teaspoon freshly ground black pepper
pinch nutmeg
5 sheets fresh whole-grain lasagna noodles (see tip below)
1/2 cup packed freshly grated Parmesan cheese

Directions
Sauce
1. To make sauce, halve or quarter the tomatoes, depending on their size. Place tomatoes, fennel, onions, red pepper, and garlic on a large rimmed baking sheet. Drizzle with olive oil and balsamic vinegar, then sprinkle with some salt and freshly ground black pepper. Mix well using your hands. Roast vegetables at 450 degrees F for 45 minutes on middle oven rack. Remove vegetables from oven and let cool slightly. At this time, you can remove and discard any loose tomato skins.

2. Transfer vegetables to a large pot. Add crushed tomatoes, vegetable broth, Italian seasoning, and crushed red pepper flakes. Simmer sauce over low heat, covered, for 15 minutes, stirring occasionally.
Purée sauce using immersion blender (or carefully transfer to a food processor or regular blender to purée). Stir in basil leaves. Taste and add salt and pepper if needed.

Filling
1. While vegetables for the sauce are roasting, prepare filling. Combine all filling ingredients in a medium bowl. Cover and refrigerate until ready to use.

2. Reduce oven heat to 375 degrees F. Spray a large baking pan (at least 9 x 13-inch) with cooking spray. Coat bottom of baking pan with sauce (about 1 cup should do it). Cut uncooked lasagna noodles in half cross-wise. Working one at a time, place about 1/4 cup to 1/2 cup filling in the centre of noodle. Roll up tightly to enclose filling. Place seam-side down in pan. Repeat with remaining noodles and filling. Cover cannelloni with sauce (you will not use all of the sauce; freeze the leftover sauce to use for a busy weeknight pasta dish!). Sprinkle with Parmesan. Cover with foil and bake for 30 minutes. Uncover and bake an additional 5 minutes. Let stand for 5 minutes before serving (they're hot!).

Tip: Packages of fresh, whole wheat or whole grain lasagna sheets can be found near the deli in most grocery stores, where you would buy ravioli or tortellini.
