Chocolate Chunky Banana Bread

Yield: 10 to 12 servings

Ingredients
Butter and flour, as needed for greasing the loaf pan
2 cups flour
1 tsp. baking soda
Pinch salt
Pinch nutmeg, freshly grated
1/2 cup butter, room temperature
1 cup regular granulated sugar
1 egg
1-1/2 cups mashed ripe bananas, (about 3 medium)
1 tsp. vanilla or almond extract
1/2 cup finely chopped dates
About 3/4 cup chopped dark chocolate

Preparation
1. Preheat oven to 350 degrees F.

2. Butter and flour an 8-inch x 4-inch loaf pan or line with parchment paper. Set aside.

3. Combine flour, baking soda, salt and nutmeg. Set aside.

4. Cream butter and sugar with electric mixture until light and fluffy. Beat in egg until smooth and incorporated. Beat in mashed banana and vanilla until smooth. Stir in flour mixture, just until blended, it’s okay if some flour remains. Fold in dates and chocolate.

5. Scrape batter into prepared loaf pan. Bake until toothpick inserted in centre of bread, come out clean, about 1 hour. Let cool completely. Slice and serve.

Banana Oatmeal Chocolate Chip Cookies

I love this recipe! Because eating healthy cookies can never be wrong and this recipe is prove of it. The mix of bananas and oatmeal make a perfect combination for a cookie breakfast or morning snack. Easy to make and perfect for kids. Made by The Perky Poppy Seed. Makes 30 cookies.

Ingredients
2 tablespoons unsalted butter
1/2 cup sugar
1/2 cup brown sugar
1 very very ripe banana
1 egg
1 teaspoon vanilla
1 cup flour, fluffed to aerate before measuring
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon cinnamon
1/4 teaspoon table salt
1-1/2 cups oatmeal (old-fashioned or quick, not instant)
1 cup chocolate chips

Directions
1. Preheat oven to 350. Melt butter in a small dish in microwave, about 20 seconds. Transfer to mixing bowl. Mix in sugars, banana, egg and vanilla.

2. In a separate bowl, mix the flour, baking power, baking soda and salt. Add the bowl of dry ingredients to the bowl of wet ingredients and mix until well combined. Stir in oatmeal and chocolate chips.

3. Drop dough by tablespoons onto a baking sheet lined with parchment (or with a Silpat). Bake for 11 – 14 minutes until set and golden. Cool 5 minutes on tray, then transfer to cooling racks.

Ingredients
- 6 ears sweet corn
- 1/2 cup milk
- 1/2 cup heavy cream
- 1/2 cup white cheddar cheese, shredded
- 1/2 teaspoon cayenne pepper
- 2 eggs, beaten
- Salt and freshly ground black pepper

Directions
1. Preheat oven to 350 degrees F. Grease casserole dish.

2. Shuck the corn and cut all kernels off with a knife into a bowl, making sure to keep all of the runoff juice from the corn. Reserve.

3. Mix together the milk, heavy cream, cheese, cayenne pepper and eggs. Add in the reserved corn, cheese, cayenne, salt, and pepper. Pour mixture over reserved corn.

4. Pour into casserole dish and bake for 35 minutes or until set.

- 1 store-bought baked thin-crust pizza shell, preferably whole-wheat, such as Boboli
- 4 cups (about 4 ounces) baby spinach leaves, thinly sliced
- 2 teaspoons olive oil
- 3 ounces prosciutto di Parma, thinly sliced
- 1/2 cup grated Parmesan (1 1/2 ounces)
- 3 cloves thinly sliced garlic
- 4 eggs

How to Cook it:
1. Preheat oven to 450 degrees F. Place the pizza shell on a cookie sheet. Scatter spinach all over crust. Drizzle with oil. Evenly distribute prosciutto, Parmesan and garlic on top of spinach. Crack eggs onto pizza, roughly positioning 1 yolk on each pizza quarter. 

2.Bake for 12-15 minutes, until spinach is wilted and egg whites are just fully cooked. Cut into 4 large slices. Serve and enjoy!

Ingredients:
1/3 cup (75 mL) canola oil
1/2 cup (125 mL) honey
2 large eggs
1 1/4 cups (300 mL) 2% plain yogurt
1 teaspoon (5 mL) finely grated orange zest
1 cup (250 mL) whole wheat flour
1 cup (250 mL) all-purpose flour
2 teaspoons (10 mL) baking powder
1 teaspoon (5 mL) baking soda
1 teaspoon (5 mL) ground cinnamon
1/2 teaspoon (2 mL) salt
1 1/2 cups (375 mL) fresh blueberries

Directions:
1. Preheat oven to 375 °F (190 °C) and line a 12-cup muffin tin (or 36 cup mini muffin tin) with paper liners (alternately, tins can be greased).

2. Whisk oil, honey, eggs, yogurt and orange zest to blend. In a separate bowl, combine flours, baking powder, baking soda, cinnamon and salt.
Add to yogurt mixture and stir just until blended. Add blueberries and spoon batter into prepared muffin cups.

3. Bake for 20 to 22 minutes, until muffins spring back when touched. Muffin will keep 2 days in an airtight container, or can be frozen.

1. Preheat the  oven to 450°F. Add butter to 9-inch pie plate; heat in oven until melted. Tilt pie plate to evenly coat bottom and side with butter. Beat flour, salt, milk and eggs with wire whisk until well blended; pour into pie plate. Place on lowest oven rack.

2. Bake for 18 minutes. Reduce oven temperature to 350°F. Bake an additional 10 minutes or until golden brown. Meanwhile, beat cream cheese and marshmallow cream with electric mixer on medium speed until well blended.

3. Fill the pancake with fruit; top with the cream cheese mixture. Serve immediately.

Graham Cracker Pancakes
2 cups flour
2 cups graham cracker crumbs
1 tbsp baking powder
1/4 cup brown sugar
2 tsp ground cinnamon
1/2 tsp kosher salt
2 eggs
1 1/2 cups buttermilk
1 1/2 cups whole milk
1/4 cup butter, melted
1 tsp vanilla extract

Cheesecake Topping
1 (8oz) package cream cheese
1/4 cup brown sugar
1/4 cup icing sugar
1 tsp vanilla extract
1/2 tsp ground cinnamon
1 cup Cool Whip Whipped Topping

Glazed Blueberries
1/4 cup icing sugar
1/4 cup water
1 tbsp fresh lemon juice
2 cups fresh blueberries 

Directions
1) For the pancakes, in a large mixing bowl, combine flour, graham cracker crumbs, baking powder, brown sugar, cinnamon and salt set aside. In a medium bowl, whisk eggs, buttermilk, whole milk, melted butter and vanilla extract. 

2) Gently stir egg mixture into the dry ingredients do not over mix, lumps are okay. Over medium heat, pour 1/2 cup batter into a hot skillet. Cook until bubbles form, flip pancake and continue to cook until done. Serve with cheesecake topping and glazed blueberries.

3) For the cheesecake topping, in an electric mixer, beat cream cheese on medium speed until soft and fluffy. Add brown sugar, icing sugar, vanilla and cinnamon continue to beat at medium speed until well combined. On low speed, add Cool Whip just until combined.

4) For the glazed blueberries, in a small saucepan, combine icing sugar, water and lemon juice. Stir over medium-high heat until mixture boils vigorously, 2-3 minutes. Remove from heat and stir in berries. 

Yield: 10 large pancakes
