INGREDIENTS
1/2 a banana, peeled
2 tsp (10 ml) cocoa
1/2 cup (125 ml) Canadian Ricotta (or just normal one)
3 tbsp (45 ml) sugar
1/4 cup (60 ml) plain yogurt
2 tbsp (30 ml) milk
16 biscuits, for ice cream sandwiches

DIRECTIONS
1. In a blender, process all ingredients, except the biscuits, until blended together.
2. Place in freezer for about 1 hour or until mixture is sufficiently firm to form sandwiches.
3. Top 8 biscuits with mixture.
4. Cover with remaining 8 biscuits and return to freezer for about 1 hour. Enjoy!

Double-Chocolate Caramel Apples


Ready to try something new for this Halloween? Try this delicious (and fun!) recipe Double-Chocolate Caramel Apples. This recipe is perfect for kids, dessert and celebrations! Everyone will love this apples.

INGREDIENTS
5 Granny Smith or Fuji apples
14 ounces unwrapped soft caramels
2 tablespoons water
5 ounces bittersweet chocolate
5 ounces milk chocolate
1 cup chopped toasted almonds (optional)

DIRECTIONS
1. Rinse and dry 5 apples (we prefer Granny Smith and Fuji varieties, 6 to 8 oz. each). Insert a craft or popsicle stick halfway into the stem end of each apple. Line a baking sheet with plain parchment paper or wax paper that has been generously coated with butter.

2. In a bowl set over a pan of simmering water, combine 14 ounces (about 50 pieces) unwrapped soft caramels (such as Kraft) and 2 tablespoons water. Stir frequently until melted and smooth.
3. Holding the stick, dip each apple one at a time into the caramel about three-quarters of the way. Swirl to coat evenly.

4. Hold stem side up and use a knife to scrape excess caramel off the bottom of apple back into bowl. Place apples on the parchment paper or buttered waxed paper and refrigerate until caramel is firm, about 5 minutes.

5. Return pan of water to a boil; remove from heat. Place 5 ounces bittersweet chocolate in another bowl and set over pan. Stir frequently until chocolate is melted and smooth.

6. Dip one side of each apple in the bittersweet chocolate, turning to coat evenly. Hold stem side up and use a knife to scrape excess chocolate off bottom of apple and back into bowl. Place each coated apple on the parchment paper or buttered waxed paper and refrigerate until chocolate is slightly set, about 10 minutes.

7. Return pan of water to a boil; remove from heat. Place 5 ounces milk chocolate in another bowl and set over pan. Stir frequently until chocolate is melted and smooth.

8. Dip other side of each apple in milk chocolate, turning to coat evenly. Hold stem side up and use a knife to scrape excess chocolate off bottom of apple and back into bowl. Place each coated apple on the parchment paper or buttered waxed paper and refrigerate until chocolate is slightly set, about 10 minutes.

9. If desired, place 1 cup chopped toasted almonds (optional; we love the way these look without the nuts) on a plate. Roll bottom third of each apple in almonds to coat. Refrigerate until chocolate is firm, about 15 minutes.

Pumpkin Swirl Cheesecake Squares


October and November is the month of the pumpkin, and what better way to show your baking skills, than with delicious (and good looking!) Pumpkin Swirl Cheesecake Squares. Perfect for a Halloween party, Thanksgiving dessert or just a nice Sunday evening.

INGREDIENTS
Crust:
1 cup all-purpose flour
¼ cup packed light brown sugar
⅓ cup cool unsalted butter, cut into pieces

Pumpkin Cheesecake:
½ package brick cream cheese, at room temperature
¾ cup sugar
1 cup pure pumpkin purée
2 tablespoons all-purpose flour
½ teaspoon baking powder
½ teaspoon ground cinnamon
1 whole egg, at room temperature
1 egg yolk

Cheesecake Swirl:
¼ package brick cream cheese, at room temperature
1 ½ tablespoons sugar
1 egg yolk
½ teaspoon vanilla extract

DIRECTIONS
1. Preheat the oven to 350 F. Grease an 8-inch square pan and line it with parchment so that the paper comes up the sides of the pan.

2. For the crust, using a food processor, pulse the flour and brown sugar together, then cut in the butter until evenly blended (the mixture will be dry and crumbly). Alternatively, this base can be made by hand, blending the butter into the flour and sugar using a pastry cutter. Press this into the prepared pan and bake it for about 18 minutes, until it turns just a little brown at the edges. Cool while making the filling.

3. Beat the cream cheese to soften and then beat in the sugar. Add the pumpkin and stir until smooth. Switch to a whisk and add in the flour, baking powder and cinnamon. Whisk in the egg and egg yolk and set aside.

4. For the cheesecake swirl, beat the cream cheese until smooth and then beat in the sugar. Stir in the egg yolk and vanilla until smooth.

5. Pour the pumpkin cheesecake onto the cooled crust. Either spoon or pipe the cheesecake swirl on top and use a bamboo skewer to create pretty swirls. Bake for about 30 minutes until, like a cheesecake, the filling is set at the edges but still has a little jiggle at the centre. Cool the squares to room temperature, then chill for at least 2 hours before slicing.

6. The squares will keep, refrigerated, for up to 3 days.

Mini pumpkin scones with cinnamon cream cheese glaze

Makes: 20 scones

INGREDIENTS
For scones:
2 1/2 cups all-purpose flour
1 tbsp baking powder
2 tsp baking soda
1/2 tsp salt
1 tsp ground cinnamon
1/4 tsp ground nutmeg
3 tbsp brown sugar, packed
1/4 cup unsalted butter, cold and cut into 1/2-in. cubes
1/4 cup non-hydrogenated margarine
1 1/2 cups canned pumpkin purée

For glaze:
1/2 pkg cream cheese at room temperature (about 125 g)
1/2 cup icing sugar
1 tsp ground cinnamon
2 tbsp hot water

DIRECTIONS
1. Preheat oven to 400F. Line a baking sheet with parchment paper and set aside. Stir flour with baking powder, baking soda, salt, cinnamon, nutmeg and brown sugar in a large bowl. Lightly mix in the butter and margarine using a pastry cutter or fork. Stop mixing when it resembles a coarse meal; do not overwork.

2. Add pumpkin purée and stir until fully combined. Line your counter with a piece of parchment paper. Turn out dough onto parchment and press out until it is an even 1-in. deep.

3. Cut into 4-in. by 4-in. squares, then cut again diagonally to form rectangles. Bake for 10 to 12 min, or until golden. Remove to a rack to cool slightly.

4. Beat cream cheese with an electric mixer in a large bowl until fluffy. Mix icing sugar and cinnamon together in a small bowl. Add the cinnamon-sugar mixture to cream cheese and beat until fluffy. Add water and continue to beat until smooth and creamy. Cover with plastic wrap and set aside until ready to use. Drizzle glaze over warm scones and serve immediately, or refrigerate in an airtight container for up to 1 week.

Churros with Chocolate Orange Sauce


This Spanish/Latin doughnuts are one of the best desserts I have ever taste, is perfect with coffee for breakfast, for snacks with he whole family or friends, or just on a Sunday afternoon to relax and enjoy this delicious Churros.

Yield: 4 to 6 servings

Ingredients
Churros
1/2 cup all purpose flour
1/2 tsp. salt
1/2 cup water
1/4 cup butter, cut into pieces
2 large eggs
Vegetable oil, for frying
Icing sugar, for dusting churros
Cinnamon, for dusting churros

Chocolate Orange Sauce
1 cup whipping cream (35 %)
1 cup finely chopped dark chocolate
Zest of 1/2 orange
1 tbsp. orange liqueur
1 tsp. vanilla

Directions
Churros
1. Sift flour with salt. Set aside.

2. Add water and butter to saucepan. Heat over medium heat until mixture comes to a boil. Immediately add sifted flour mixture all at once and stir with a wooden spoon. Remove from heat and continue stirring until mixture pulls away from the sides of the pan. Return mixture to heat. Cook, stirring, until mixture is drier, about 1 to 2 minutes. Remove from heat.

3. Cool mixture slightly for 5 minutes or beat for 1 minute to cool down faster. Beat in eggs one at a time, beating well after each addition until dough is shiny and smooth.

4. Add oil to deep fryer or pour enough oil into a deep saucepan to come 2 to 3-inches up sides of pan. Heat oil to 375 degrees F.

5. Fit piping bag with large star tip. Scrape churros dough into piping bag. Cook churros in batches, carefully, piping mixture into hot oil into desired lengths. Fry until golden brown and cooked through, about 3 to 5 minutes. Transfer to paper towel. Dust with icing sugar and cinnamon. Serve warm with Chocolate Orange Sauce.

Chocolate Orange Sauce
1. Add chocolate to heatproof bowl. Heat cream until it just comes to a boil. Pour over chocolate. Let stand for 1 minute. Whisk until chocolate is melted and smooth. Add orange zest, orange liqueur and vanilla. Stir to combine.

Fudgy Brownie Bites


Chocolate lovers have never been more happy, know why? This Fudgy Brownie Bites will make anyone happy! perfect for kids, family and friends. Good for Sunday snacks, appetizers, dessert, or just for fun!

Ingredients
8 ounces (2 sticks) unsalted butter, chopped
2 cups sugar
1 cup unsweetened cocoa powder
4 ounces 70% cocoa chocolate bar, chopped
1/2 teaspoon salt
1/2 teaspoon pure vanilla extract
3 large eggs, cold
3/4 cup cake flour

Directions
1. Butter a mini muffin pan (with 36 muffin cups); preheat an oven to 325°F with a rack in the bottom third of the oven.

2.  Place the butter in a large bowl over a pot of simmering water (bain marie). When it begins to melt, add the sugar, cocoa powder and chocolate bar. Stir occasionally until the butter and chocolate have completely melted and mixture is completely mixed together–it may still appear a bit grainy.

3. Remove the bowl from the bain marie and allow the temperature of the mixture to cool slightly.

4. Add the vanilla and stir. Then add each egg, one at a time, mixing well after each to completely incorporate it.

5. Add the cake flour and mix the flour in until it is completely dispersed. Continue to mix for another minute to ensure the mixture is smooth. The batter will be very thick.

6. Spoon the batter evenly into the mini-cupcake pan. Place in the preheated oven and cook for 15 to 20 minutes, or until a toothpick inserted comes out covered in crumbs and a paste-like substance, but not a liquidy looking substance (it should stick to the toothpick and not run or fall off). Baked for 18 minutes.

7. Allow the brownies to cool to room temperature then place the pans in the freeze for 20 minutes–this will help the brownies come out of the pan easier. Remove from the freezer, run a knife along the outside of each brownie and pop the brownie bite out.

Hazelnut Chocolate Thumbprint Cookies


Chocolate Hazelnut lovers get ready, you will fall in love with this delicious Hazelnut Chocolate Thumbprint Cookies! This recipe is perfect for the whole family and kids will love it. 

Makes about 2 dozen
Ingredients
1 almost-full cup (4 ounces) hazelnuts, toasted, skinned and cooled
2/3 cup sugar
2/3 cup matzo cake meal or 1 cup plus 1 tablespoon flour
1/4 teaspoon salt
1 stick (1/2 cup) unsalted butter, melted and cooled slightly
1 large egg, lightly beaten
1 teaspoon vanilla extract
Chocolate (I used chocolate baking discs or “wafers”; 2 or 3 chocolate chips would also work)

Directions
1. Pulse hazelnuts, sugar, matzo cake meal or flour, and salt in a food processor until finely ground. (Be careful not to grind to a paste.) Transfer to a bowl and stir in butter, egg, and extract until combined well. Chill dough, covered, until firm, about 30 minutes.

2. Put oven rack in middle position and preheat oven to 350°F.

3. Drop level tablespoons of dough 1 inch apart onto 2 ungreased baking sheets (though I lined mine with parchment paper, for an easier lazier clean-up). Roll dough into balls, then chill until slightly firm, about 10 minutes.

4. Press one piece of chocolate firmly into the top of each ball of cookie dough and bake, 1 sheet at a time, until tops are pale golden and undersides are golden, 10 to 12 minutes. Be careful not to overbake. Transfer cookies to a rack and cool completely.

5. To fill with jam instead: After balls of cookie dough have been chilled for an additional 10 minutes, make a 1/2-inch-wide (1/3-inch-deep) indentation in center of each ball using your thumb, index finger, or the rounded end of a wooden spoon. Fill each indentation with 1/4 teaspoon jam.

Almond variation: The hazelnuts can also be swapped with 3/4 cup sliced almonds.

Do ahead: Cookies keep in an airtight container at room temperature 3 days.

Toasted Coconut Shortbread


Have any ideas what to bake for this week? I have the perfect and easy recipe for you and the family, a delicious Toasted Coconut Shortbread! If you love coconut, you cannot miss this one - perfect serve with hot chocolate or milk.

Ingredients
1/2 cup (about 1.5 ounces) unsweetened shredded coconut*
3/4 cup (1 1/2 sticks or 6 ounces) unsalted butter, room temperature**
1/2 cup plus 1 teaspoon sugar
1/2 to 3/4 teaspoon coarse kosher salt (Updated: for unsweetened coconut, the smaller amount; sweetened, the larger amount)
1/2 teaspoon vanilla extract
1 1/3 cups all purpose flour

Directions
1. Preheat oven to 325°F. Spread coconut on rimmed baking sheet. Bake until coconut is light golden, stirring occasionally, about 8 minutes. Cool completely, then grind in a coffee grinder, food processor or blender until coarsely ground.

2. Using electric mixer, beat butter and sugar in large bowl until well blended. Mix in salt and vanilla. Beat in flour in 2 additions. Stir in toasted coconut. Gather dough together, flatten into a disc and wrap in plastic. Chill at least 1 hour. (Can be prepared 2 days ahead. Keep chilled. Soften slightly at room temperature before rolling out.)

3. Preheat oven to 325°F. Line a rimmed baking sheet with parchment paper. Roll out dough disk on lightly floured work surface to scant 1/4-inch thickness. Using 1 3/4- to 2-inch-diameter cookie cutters, cut dough into rounds. Transfer cookies to prepared baking sheets, spacing 1 inch apart. Gather dough scraps and reroll; cut out additional cookies.

4. Bake cookies until light golden, about 20 minutes. Cool on baking sheets 10 minutes. Transfer cookies to racks and cool completely. (Can be made ahead. Store airtight at room temperature up to 1 week.)

** If you’re looking for an excuse to splurge on the good butter, shortbread is it. You will absolutely appreciate the extra flavor as it shows up in this cookie.

Ina's Chocolate Brownie Pudding

If you're a chocolate lover, be ready to love this recipe! Ina's Chocolate Brownie Pudding is the perfect dessert for any meal. A soft - warm on the inside brownie, with vanilla ice cream on top.

Ingredients
1/2 pound (2 sticks) unsalted butter, plus extra for buttering the dish
4 extra-large eggs, at room temperature
2 cups sugar
3/4 cup good cocoa powder
1/2 cup all-purpose flour
Seeds scraped from 1 vanilla bean
1 tablespoon framboise liqueur, optional
Vanilla ice cream, for serving

Directions
1. Preheat the oven to 325 degrees F. Lightly butter a 2-quart (9 by 12 by 2-inch) oval baking dish. Melt the 1/2 pound of butter and set aside to cool.

2. In the bowl of an electric mixer fitted with the paddle attachment, beat the eggs and sugar on medium-high speed for 5 to 10 minutes, until very thick and light yellow. Meanwhile, sift the cocoa powder and flour together and set aside.

3. When the egg and sugar mixture is ready, reduce the speed to low and add the vanilla seeds, framboise, if using, and the cocoa powder and flour mixture. Mix only until combined. With mixer still on low, slowly pour in the cooled butter and mix again just until combined.

4. Pour the brownie mixture into the prepared dish and place it in a larger baking pan. Add enough of the hottest tap water to the pan to come halfway up the side of the dish and bake for exactly 1 hour. A cake tester inserted 2 inches from the side will come out 3/4 clean. The center will appear very under-baked; this dessert is between a brownie and a pudding. Allow to cool and serve with vanilla ice cream.

Summer is here! and let's enjoy this beautiful season with everyone in the family, and for that let me share a must-try recipe: Frozen Peanut Butter Bites. This recipe is perfect for kids, family, easy-to make and super quick! Enjoy~

Preparation time: 20 minutes
Inactive time: 1 hour and 30 minutes
Cook time: 5 minutes
Total time: 1 hour and 55 minutes

Ingredients
1 (18-ounce) jar creamy peanut butter
2 1/2 cups confectioners' sugar
1 teaspoon vanilla extract
8 ounces semi-sweet chocolate, chopped

Directions
1. Using an electric mixer or a whisk, beat the peanut butter and confectioners' sugar together until smooth and stiff. Beat in the vanilla extract. Shape the peanut butter mixture into 20 (1-inch) balls and place on a waxed paper-lined sheet tray. Place the tray in the freezer for 1 hour.

2. Add chopped chocolate to a small bowl set over gently simmering water. Stir to melt. Remove chocolate from heat. With 2 forks, carefully dip the chilled peanut butter balls 1/2 way into the chocolate, let excess drip off, and lay onto the waxed paper-lined sheet tray.

3. With a fork, swirl some decorative chocolate across the top of each bite. Place in the refrigerator for the chocolate to set and the peanut butter to solidify, about 30 minutes.

Cook's Note: If it's a hot and humid day outside dust your hands with confectioners' sugar before rolling the balls. This will make it less sticky.

Mamma Agata's Recipe for Lemon Cake (Dolce al limone di Mamma Agata)

If you love bake, you must try this recipe! Mamma Agata's Lemon Cake! this cake is perfect for summer, spending time with the kids, enjoying a family-friendly day, well for any occasion. This recipe is from her "Simple and Genuine family cookbook". This cake is perfect to drink with tea, lemonade or coffee.

Ingredients
300 gr or 1 1/4 cups sugar

250 gr or 2 sticks butter (1/2 lb), PLUS an additional 1.5 Tablespoons butter, to grease the pan

4 eggs

Grated zest of 2 large lemons (4 lemons, if small)

A pinch Sea salt

300 gr or 2 cups “00” Flour
16 gr or 2 tablespoons of Pan degli Angeli Italian baking powder

125 ml or 1/2 cup whole milk

50 gr or 1/4 cup hazelnuts (finely chopped and toasted)

Lemonade Mixture
300 ml or 1 1/4 cups water
Juice of 3 lemons

8 Tablespoons sugar

Directions
1. Pre-heat the oven to 175 degrees Celsius or 350 degrees Fahrenheit. Whip the butter in a mixing bowl on high speed for at least two minutes. Add the sugar and continue to whip until a soft cream forms. Mix the baking powder into the flour and set aside.Add the following ingredients to the mixing bowl, one at a time, and blend after each:
 Eggs, one at a time, 
salt, grated lemon zest
.

2. Alternate adding and blending the following ingredients into the mixing bowl: 
Flour and baking powder mixture and milk. In other words, add one quarter of the flour and blend; then, add one quarter of the milk and blend. Repeat this process until all of the flour and milk are blended into the batter.

3. Mix the ingredients on medium speed for about five minutes until the texture of the batter has a light and airy consistency (similar to a mousse). NOTE: Do not beat the batter for longer than five minutes after adding the baking powder.

4. Coat the surface of the fluted pan with butter before dusting it with flour. Shake off any excess flour before adding your cake batter to the pan.  NOTE: This step creates a non-stick surface so that the cake will easily release from the pan and retain its shape.

5. Pour the batter into your greased and floured pan. Bake the cake in the pre-heated oven for forty minutes. While the cake is baking in the oven, prepare the lemonade mixture as follows.

6. Squeeze the lemons into a pitcher (or other container from which you can easily pour the lemonade mixture later). Add the sugar to the lemon juice.
 Mix until the sugar is fully dissolved in the lemon juice. Add the water. Once the lemon cake is finished baking, let it sit for two hours outside the oven to bring it to room temperature.

7. Before we start this process, we want to ensure that the cake does NOT stick to the pan. In getting it to room temperature, the butter has solidified and that means there is a risk that the cake will stick to the pan. Here is the process just to ensure it does NOT stick to the pan before we proceed.

8. Place a plate on top of the pan. Tip the pan over and carefully shake the cake out of the pan. Immediately, place the cake pan back onto the cake. Carefully turn the pan back over. Remove the plate to expose the cake. This will seem like we have done nothing, but what we have done is to ensure that the cake will not stick later when we are ready to plate it. 

NOTE: If the cake does seem like it wants to stick, you will need to place the cake back in the oven for a few minutes, just to warm the butter, and it will release from the pan easily.

9. Now it is time to add the lemonade mixture to the cake – that is what makes it so moist.

10. Over thirty minutes: Slowly pour a little bit of the lemonade mixture all over the cake in the pan every ten minutes (i.e. three times in total). This will allow the cake to absorb the lemonade mixture very slowly. You should NOT have used all of the lemonade mixture at this point.

11. After thirty minutes, tip the lemon cake onto a serving plate and add the remaining lemonade to the top of the cake, distributing it evenly all over the cake. 

NOTE: If you feel that the cake is still too dry, you may make a little more of the lemonade. Garnish the cake with finely chopped hazelnuts.

No-Bake Fresh Fruit Tart

Summer is here! and there's nothing better than a  10 minutes Rachael's ready to-go dessert. This easy and quick desserts features graham cracker pie crust, vanilla pudding and lots of berries.

Preparation time: 10 minutes
Total time: 10 minutes

Ingredients
1 box vanilla or lemon flavor instant pudding mix
1 orange, zested
1/2 cup seedless raspberry or blackberry preserves
1 prepared graham cracker crust, found on baking aisle
1/2 pint raspberries
1/2 pint blackberries or blueberries, your preference
6 large strawberries, sliced
2 tablespoons chopped fresh mint, optional

Directions
Make pudding according to package directions and let stand 5 minutes. Stir orange zest into the pudding. Spread a thin layer of preserves across the bottom of graham cracker crust. Top with pudding. Arrange fruit on pudding, then sprinkle pie with mint, if desired.

Ingredients
1 cup whole hazelnuts, preferably blanched
2 1/2 cups flour, plus flour for work surface
1/2 cup Dutch-style cocoa powder
1 tablespoon espresso powder
Pinch of salt
1/2 teaspoon baking soda
3/4 teaspoon baking powder
4 large eggs
1 1/3 cups sugar.

Directions
1. Preheat oven to 350 degrees. Spread hazelnuts on baking sheet and toast about 10 minutes, until lightly browned. If hazelnuts are not blanched, toast them until the skins begin to crack, then remove them from oven and wrap them in clean linen or cotton towel (not terrycloth). Rub hot nuts to remove most of the skin. Set toasted nuts aside.

2. Sift the flour, cocoa, espresso powder, salt, baking soda and baking powder together and set aside.

3. Beat eggs lightly, just until blended, in mixing bowl with whisk or in electric mixer. Remove two tablespoons of egg mixture to small dish and set aside. Beat sugar into remaining eggs until blended. Stir in flour mixture to form soft dough.

4. Divide the dough in half and place one portion on a well-floured work surface. With floured hands, pat it into a six-inch square. Scatter half the hazelnuts on the dough and press them into the surface. Roll the dough into a cylinder about 2 inches in diameter and 12 to 15 inches long. Line the baking sheet with parchment paper and place the roll of dough on the baking sheet. Repeat with the remaining dough. Brush the tops of both rolls with the reserved egg.

5. Place in the oven and bake about 15 minutes, until firm to the touch. (It takes 20 to 25 minutes.) Transfer to a cutting board and cut on an angle into slices one-half-inch thick. (Let them cool for five minutes it will made this easier, as well as a sharp knife with a tight serrate.) Return the slices to the baking sheet, laying them on their cut sides, and return them to the oven. Bake another 20 minutes, until they are crisp and dry. Allow to cool completely before storing or serving.

Rugelach Pinwheels

I love baking, do you know why? This recipe will leave you open-mouth, delicious Rugelach Pinwheels. This delicious recipe includes raisins, walnuts and apricots.  All mix in a roller coaster of flavor, try it you will love it! This is the perfect recipe for baking-beginners, kids, family time and dessert or snack. It makes about 50 cookies.

Dough
1 package (8 ounces) cream cheese, room temperature
1 cup (2 sticks) unsalted butter, cut into small pieces, room temperature
1/4 cup granulated sugar
2 cups sifted bleached all-purpose flour

Filling
1/4 cup plus 2 tablespoons granulated sugar
1/4 cup packed light-brown sugar
1/2 teaspoon ground cinnamon
3/4 cup golden raisins, chopped
1 cup finely chopped walnuts
1/2 cup apricots preserves, heated and cooled slightly

Topping
1 cup sugar
2 teaspoons ground cinnamon

Directions
1. Place cream cheese and butter in the bowl of a food processor and process until smooth and creamy. Add sugar and continue processing until fully incorporated. Add flour and pulse just until dough comes together. Divide dough into 2 equal pieces, wrap with plastic wrap, and refrigerate at least 2 hours.

2. Meanwhile, make filling. In a medium bowl, mix together granulated and brown sugar, cinnamon, raisins, and walnuts; set aside.

3. On a lightly floured surface, roll out 1 piece of dough into a rectangle about 1/8-inch thick. Spread a thin layer of preserves over dough; sprinkle with filling mixture. Roll dough into a log beginning with one of the long sides; wrap in plastic wrap. Transfer dough log baking sheet. Repeat process with remaining piece of dough. Place dough logs in refrigerator; let chill at least 1 hour.

4. Preheat oven to 350 degrees. Line baking sheets with parchment paper; set aside. Mix together the cinnamon and sugar for the topping; set aside.

5. Slice chilled dough logs crosswise, about 1/4 inch thick. Toss each cookie in the cinnamon-sugar mixture. Place cookies 3 inches apart on prepared baking sheets. Bake until lightly browned, 18 to 20 minutes. Lift parchment paper from baking sheets and transfer to a wire cooling rack; let cool.

Ingredients
- 1 cup (2 sticks) unsalted butter, softened, plus more, for coating pans
- 1 (18 1/4-ounce) box white cake mix
- 1 teaspoon finely grated lemon zest
- 2 teaspoons vanilla extract
- 3 tablespoons sweetened pink lemonade drink powder
- 1 pound confectioners' sugar
- 5 tablespoons frozen pink lemonade concentrate
- 1 teaspoon vanilla
- 1 teaspoon finely grated lemon zest

Directions
1. Preheat the oven to 350 degrees F. Butter 2 (8-inch) round cake pans and line the bottoms with parchment paper or waxed paper.

2. Prepare the cake batter according to the package directions. To the batter, stir in the lemon zest, vanilla, and pink lemonade powder. Pour the batter evenly into the prepared pans. Bake until golden and a toothpick inserted into the center of the cake comes out clean, 30 to 35 minutes. Let the cakes cool in the pans for 10 minutes. Carefully turn the cakes out onto a wire rack to cool completely.

3. While the cake is baking, prepare the frosting by beating together the confectioners' sugar and remaining 1 cup butter until fluffy. Beat in the remaining frosting ingredients until combined.

4. Transfer one cake to a cake stand or large platter. Using an offset spatula, spread the top of the cake with a layer of frosting. Place the second cake on top of the first. Spread the remaining frosting over the top and sides of both layers.

- 2 1/2 pounds ripe peaches, pitted and cut into large chunks
- 1 tablespoon cornstarch
- 1/2 cup plus 2 tablespoons sugar
- 3/4 cup all-purpose flour
- 2 tablespoons ground flax seed
- 1/4 teaspoon kosher salt
- 3 tablespoons cold unsalted butter, cut into small pieces
- 2 tablespoons reduced-fat buttermilk
- Non-fat vanilla yogurt or frozen yogurt, for serving, optional

Directions
1. Preheat the oven to 375 degrees F. Lightly coat eight 6-ounce ramekins with nonstick cooking spray and place on a rimmed baking sheet.

2. Toss the peaches with the cornstarch and 2 tablespoons sugar in a large bowl. Let stand until juicy, about 10 minutes. Divide the peaches and juices among the ramekins.

3. While the peaches sit, combine the flour, remaining 1/2 cup sugar, flax seed and salt. Cut in the butter, using a fork or pastry cutter, until the mixture forms medium-size crumbs. Stir in the buttermilk until well moistened and large clumps hold together.

4. Sprinkle the topping evenly over the peaches. Bake until the fruit is bubbling and the topping is golden brown and crisp, 40 to 45 minutes. Serve warm or at room temperature with vanilla yogurt or frozen yogurt if desired.

Dutch Boy Pancake

Pie for breakfast? Why not! try this pie-looking pancake filled with fresh fruit and topped with sweetened cream cheese, breakfast have never been so delicious. Can be server as breakfast or dessert.

Preparation time: 10 minutes
Total time: 30 minutes

Ingredients
2 Tbsp.  butter or margarine
1/2 cup  flour
1/4 tsp.  salt
1/2 cup  milk
3  eggs
4 oz.  (1/2 of 8-oz. pkg.) philadelphia Cream Cheese, softened
1/2 cup  jet-puffed Marshmallow Creme
1 cup  sliced strawberries
2 medium  peaches, peeled, sliced
1 cup  blueberries

Directions
1. Preheat the  oven to 450°F. Add butter to 9-inch pie plate; heat in oven until melted. Tilt pie plate to evenly coat bottom and side with butter. Beat flour, salt, milk and eggs with wire whisk until well blended; pour into pie plate. Place on lowest oven rack.

2. Bake for 18 minutes. Reduce oven temperature to 350°F. Bake an additional 10 minutes or until golden brown. Meanwhile, beat cream cheese and marshmallow cream with electric mixer on medium speed until well blended.

3. Fill the pancake with fruit; top with the cream cheese mixture. Serve immediately.
